I can't tell you how much I love this simple side salad. Butter lettuce has a delicate, sweet crunch to it, and its crevices catch the nubbins in the vinaigrette perfectly. It's crazy simple, and it's the perfect accompaniment to a Zucchini Frittatas, Soft Scrambled Eggs, Simplest Roast Chicken, Crispy Curry Quinoa Cakes—you name it. While I clearly love butter lettuce for this, I also encourage you to use any sort of lovely seasonal lettuces that catch your eye at your farmers' market. Different colors and textures will make this simple side salad even more stunning!
Ingredients
- 2 heads butter lettuce, cleaned and torn into bite sized bits
- 1/4 cup Mustard-Shallot Vinaigrette,
- 3 tablespoons chives
- flake sea salt (like Maldon) and freshly ground black pepper
Instructions
- Toss all ingredients together with your hands or tongs to coat the lettuce, and mix well.
