Cuban Grilled Cheese Sandwich

This riff on classic grilled cheese sandwiches takes a cue from the legendary Cubano sandwich. With a delicious mix of spicy and sour-tart from the mustard and pickles, it's one of our all-time faves. It's bound to become one of yours too!

Ingredients

Instructions

  • Spread one side of each slice of bread with butter. Place 4 slices, butter side down, into a large nonstick or cast iron skillet over medium-high heat. (Depending on the size of your skillet, you may need to do this in 2 batches.) Spread Dijon onto the non-buttered sides of the bread in the pan, then top with pork, cheese and pickles. Top with the other four slices of bread, butter side up.
  • Cook for 5-6 minutes on one side, until nicely browned and crisp on the bottom, and carefully flip with a stiff spatula. Continue cooking another 4-5 minutes, until bottom is also nicely browned and crisp, and cheese is melted. Cut in half, and serve.

Braised Rabbit with Easy Pan Sauce

You’ll want a tender “fryer” or “young” rabbit for this recipe; fryers typically weigh less than 3 pounds. Ask the butcher to cut the rabbit into six serving pieces, which makes this a simple dish you can prepare on a weeknight.
