This simple recipe helps summer-fresh tomatoes shine. Use any ripe tomatoes you have—heirlooms, cherry tomatoes, Romas, etc.
1 pound tomatoes, cut into 1-inch chunks (as ripe as you can find)
2 teaspoons red wine vinegar
1 clove garlic, grated
sea salt and freshly ground black pepper, to taste
Combine all ingredients in a medium bowl. Let stand 30 minutes before serving to allow the flavors to develop.
