This riff on classic grilled cheese sandwiches takes a cue from the legendary Cubano sandwich. With a delicious mix of spicy and sour-tart from the mustard and pickles, it's one of our all-time faves. It's bound to become one of yours too!
Ingredients
- 8 slices country bread
- 2 tablespoons unsalted butter
- 2 tablespoons Dijon mustard
- 8 ounces Spiced Pork Roast, thinly sliced
- 4 slices Swiss cheese
- 1/4 cup bread & butter pickles (or our popular Spicy-Sweet Pickled Cucumbers),
Instructions
- Spread one side of each slice of bread with butter. Place 4 slices, butter side down, into a large nonstick or cast iron skillet over medium-high heat. (Depending on the size of your skillet, you may need to do this in 2 batches.) Spread Dijon onto the non-buttered sides of the bread in the pan, then top with pork, cheese and pickles. Top with the other four slices of bread, butter side up.
- Cook for 5-6 minutes on one side, until nicely browned and crisp on the bottom, and carefully flip with a stiff spatula. Continue cooking another 4-5 minutes, until bottom is also nicely browned and crisp, and cheese is melted. Cut in half, and serve.
