Honey-Roasted Fig Tartine with Prosciutto

I had a fantastic sandwich from Cowgirl Creamery while in Point Reyes, CA, this weekend that reignited my love of sandwichesin particular, topless ones called “tartines.” I made this one with leftover Red Hawk from my visit, along with luscious figs picked up en route. Drizzling the fig with honey, and popping it under the broiler gives it an impromptu jammy qualityespecially good paired with gooey cheese and crisp prosciutto.

Ingredients

  • 3 medium to large figs, cut in half lengthwise
  • 2 teaspoons honey
  • black pepper, several grinds
  • 1/4 ounce Camembert (or similar, like Red Hawk from Cowgirl Creamery), cut into thin slices
  • 1 thin slice prosciutto
  • 1 half of a quarter baguette, cut lengthwise

Instructions

  • Preheat broiler. Place figs, cut side up, on a piece of foil in the broiler pan, and press down gently with a fork to flatten. Drizzle with honey, grind pepper over top, and broil for 5-10 minutes, until bubbling and soft.
  • In the meantime, lay the cheese slices on the cut side of the baguette, and top with prosciutto. Place on tray with figs, and broil until prosciutto is just crisp and cheese melted, about 3-5 minutes.
  • Arrange figs on top of prosciutto, and serve.
Makes 1 sandwich.

Watermelon and Arugula Salad with Feta

We love how the peppery greens, briny olives, toasted nuts and creamy cheese contrast with the sweet melon. To make these even easier, as leftover grilled melon sits in the fridge, it releases delicious juice that provides the “dressing” to lightly coat the greens. This is great with our Grilled Garlic Bread.

Balsamic Marinated Watermelon

This simple treatment highlights the natural sweetness of summer-fresh watermelon. Serve it on its own with toothpicks as a cool appetizer (terrific with chilled rosé), as side dish (it’s especially good with poultry) or tossed in a salad. You can even serve it as the star attraction with cubed fresh mozzarella and basil in a spin on caprese salad. A mini personal-size seedless watermelon is just right to make this recipe.
