This riff on classic grilled cheese sandwiches takes a cue from the legendary Cubano sandwich. With a delicious mix of spicy and sour-tart from the mustard and pickles, it's one of our all-time faves. It's bound to become one of yours, too!
8 slices country bread
2 tablespoons unsalted butter
2 tablespoons Dijon mustard
8 ounces Spiced Pork Roast, thinly sliced
4 slices Swiss cheese
1/4 cup bread & butter pickles (or our popular Spicy-Sweet Pickled Cucumbers)
Spread one side of each slice of bread with butter. Place 4 slices, butter side down, into a large nonstick or cast iron skillet over medium-high heat. Spread Dijon onto the non-buttered sides of the bread in the pan, then top with pork, cheese and pickles. Top with the other four slices of bread, butter side up.
Cook for 5-6 minutes on one side, until nicely browned and crisp on the bottom, and carefully flip with a stiff spatula. Continue cooking another 4-5 minutes, until bottom is also nicely browned and crisp, and cheese is melted. Cut in half and serve. (Depending on the size of your skillet, you may need to do this in 2 batches.)
