These sweet potato wedges have a spicy foil to their sweetness. They're reminiscent of sweet potato fries, but a whole lot healthier. Look for the dark-skinned sweet potatoes with bright orange flesh (also, erroneously, called garnet yams).
- 2 pounds sweet potatoes, peeled and cut lengthwise into 1/2-inch wedges
 - 1 tablespoon  extra virgin olive oil
 - 1 teaspoon kosher salt
 - 1 teaspoon sugar
 - 1/4 teaspoon freshly ground black pepper
 - 1/4 teaspoon hot paprika
 - 1/2 teaspoon ground cumin
 
 
Heat oven to 475°F. In a large bowl, toss together sweet potatoes and olive oil to coat.
In a small bowl, combine salt and remaining ingredients. Add spice mix to sweet potatoes, and toss again to coat evenly. 
Arrange sweet potato wedges in a single layer on a baking sheet, and cook for 20-25 minutes, turning once after 10 minutes and twice thereafter, until tender all the way through and slightly crisped on the outside.
