This simple recipe helps summer-fresh tomatoes shine. Use any ripe tomatoes you have—heirlooms, cherry tomatoes, Romas, etc.

Ingredients

  • 1 pound tomatoes (as ripe as you can find), cut into 1-inch chunks
  • 2 teaspoons red wine vinegar
  • 1 clove garlic, grated
  • sea salt and freshly ground black pepper, to taste

Instructions

  • Combine all ingredients in a medium bowl. Let stand 30 minutes before serving to allow the flavors to develop.
